点评：Mara and the team at Miles Away Travel single handedly saved my Sifnos experience. Mara’s warm and welcoming personality made for easy conversation and before we reached Kasto, I knew we were going to hit it off. As we walked around Kostas and Apollonia she shared with me the rich history of Sifnos, the people, the community and the food. We meandered through side streets, we saw the Church of the 7 Martyrs, we stopped by the coolest bar where every seat in the house has a view. She told me about the 90 year old bar owner from Cuba who is an absolute hoot. We walked and shopped the stores along the stenos in Apollonia and by the end of 4 hours, we were fast friends. We hit it off so that I didn’t want to leave Sifnos without us having an authentic Sifonia dinner at a traditional taverna. We dined where the locals eat and the food was nothing short of mind-blowing delicious. From the barrel wine, to famous Sifnos caper salad (kapparosalata), chickpea fritters (revithokeftedes), the chickpea soup/stew (revithada), the Greek salad with local cheese (manoura, which is much tastier than Feta) and the piece de-resistance, the fall off the bone, so tender you don’t need a knife tender, lamb (mastelo). I ate so much and it was hands down by the end of the meal it felt like receiving a big hug from grandma. Next thing we knew it was midnight and I had a helicopter to catch first thing in the morning and she still had 50 or emails to go through. Needless to say, I left a piece of my heart in Sifnos with Mara leaving handprints on my soul.
