Sergio was a fantastic instructor, guiding our group of twelve through every step of making the perfect Pastel de Nata at the Real Bakery. He provided clear instructions, helpful tips, and all the tools we needed to craft these delicious Portuguese custard tarts from scratch.
We each took part in mixing the ingredients — carefully measuring the flour, sugar, 2% milk, eggs, and a pinch of salt — while Sergio shared advice on how to enhance the flavor and achieve the ideal baking temperature. Kneading the dough on the marble counter, dusted lightly with flour, was an essential and satisfying part of the process.
Filling the tins and watching our pastries bake filled the room with anticipation — and when they came out golden and crisp, the first bite was pure joy. Each of us made three Pastéis de Nata to take home (unless you couldn’t resist eating them on the spot!).
