点评：The White Hag Brewery isn't the easiest place to stumble upon... it sits in an unexpected location that gives little away from the outside. But step through the door, and you immediately understand why people make the journey. Inside it's impressive, well set-up, and buzzing with the quiet industry of a brewery that takes its craft seriously.
Getting there by train from Sligo is entirely doable and actually rather enjoyable, just check the timetable carefully before you go, as departures require a bit of planning. Consider it part of the adventure.
We joined the barrel-aged variant of the brewery tour, which was a treat in itself. Our guide Rory was simply a delight... enthusiastic, knowledgeable, and completely unhurried. He gave us the full picture with genuine passion, walking us through every stage of the process while brewing was actively underway around us. Being just the two of us made it an exceptionally personal experience, the kind where you can ask every question that occurs to you and follow every tangent that interests you.
The tasting room, when we got there, was a warm and energetic surprise... exactly the atmosphere you hope for but don't always find. A real highlight.
Our time at the tasting table was somewhat curtailed by an unforgiving train schedule, but White Hag handled this with great grace and adjusted the price accordingly. That kind of thoughtfulness leaves a lasting impression.
A wonderful afternoon. Highly recommended, and give yourself more time at the tasting table than we did.
