点评:We booked a Full Day with Thomas, via The Hotel Du Palais in Dijon. Well what a genius!! He is incredibly knowledgeable and very good fun. You can learn absolutely everything about the quality of wines, what to look for when buying wine… including in great detail the process from the nurturing of the vine to the delicious experience of the consumption of wine at the table! We learnt a lot about the area, the lands, the weather, the hierarchy, the different grapes, and even suggested pairings. We visited two caves and also had the opportunity to stay in Beaune for lunch where we had a two course meal at Ma Maison just off the square in a little courtyard. Highly recommend it. Unfortunately I wasn’t aware of the hospice with its special roof and special place in history from the war. Allow time for that if possible.
We also did a wine tasting in the actual Hotel du Palais too with Leon. Again it was a very good experience. They have their own cellar and it was a pleasure to be able to sit down on arrival after a long journey to sample a few wines before going to town to try the local ‘Beuf Bourguignon’. A must do!! Also visit the local market. We were able to do that on the Friday. Amazing locally grown fruit and veg, fish, meat and lots of freshly prepared food to take away too.
