点评:Our experience with Sally and Guido at Convivio was one of the highlights of our time in Italy. From the moment they picked us up at the train station, we felt welcomed and well cared for.
They first drove us to an olive grove, where we saw one of the oldest olive trees in the area. Walking among the trees, we learned about their growth, care, harvesting, and the olive oil production process. It was fascinating to gain a deeper understanding of how much tradition, knowledge, and work go into producing such an important part of Italian cuisine.
Before beginning the cooking class, Guido served us bread with their olive oil as an appetizer. The oil was exceptional—smooth, fresh, and distinctly aromatic, with a pleasant peppery quality. Guido explained that good olive oil should smell like fresh grass, and once he pointed it out, we could immediately appreciate that fresh, grassy character.
Because no other guests had booked that day, the experience was completely private for just the two of us. This made the afternoon especially intimate and personal. Sally and Guido took the time to talk with us about our families, their family history, and where we all came from, making the experience feel much more like visiting friends than attending a typical cooking class.
Together, we prepared pasta with sausage ragù and a lemon cake made from Guido’s grandmother’s recipe. Everything was delicious, and we especially appreciated that they emailed the recipes to us afterward so we could recreate the dishes at home.
The setting was beautiful, with a peaceful terrace and lovely views of the surrounding countryside. Sharing the meal there, along with local wine and wonderful conversation, was a memorable way to experience the region.
Sally and Guido were warm, knowledgeable, generous, and genuinely passionate about their food, family, and local traditions. Convivio offers much more than a cooking class—it is an authentic and personal introduction to Italian food, olive oil, hospitality, and countryside life. We would highly recommend this experience to anyone visiting the area.
