点评:During New Hampshire’s Maple Weekend, I usually visit Spring Harvest Maple Farm. I like their award-winning syrup.
This year, when I arrived, the evaporator was going full steam, as I expected. I love the smell of the maple-scented vapor that comes from an evaporator.
The maple syrup there is sold in the four different grades: Golden, Amber, Dark, and Very Dark. I sampled the Dark Maple Syrup and the Dark Maple Syrup Aged in a Bourbon Barrel which was interesting. It had a very full-bodied flavor.
Out on the merchandise table, items for sampling included Maple Cream, Maple Shortbread, and Maple Penuche. There were individual maple candies in maple leaf shapes at $1.00 each.
I also found jars of maple cream and maple rub. I hadn’t seen the rub before.
This year, a gentleman stationed near the sugarhouse was giving talks on the maple syrup process. He showed plastic tubing lines that had been damaged from chewing by different animals. Smaller holes were from squirrels; larger holes were from porcupines; and, bears would break the lines in half. Workers would repair the damaged tubing with tape, but that served as a marker for the squirrels as to where there was easy access again to the sap inside the tubing.
He also talked about the reverse osmosis machine that separated water from the sugary sap. It greatly reduced evaporator time from 20 hours to just 4 hours to make some syrup. It saved fuel and the maple syrup producer’s time as well.
They used their tubing for 4 years. After that, there was bacteria backup in it.
He talked about warm days and sub-32 F nights. Then, he showed the taps and sample of a tree that had been tapped. The tree repaired itself on the outside, but the tap holes were still visible on the inside. He showed a sample.
He said that, if the weather wasn’t right, the trees knew it. He also said that scientists have revealed that the trees somehow communicate with one another. I asked if it was through the roots which are closer together underground. He thought that was a good possibility.
In addition to its own property, the farm leased a large parcel of acreage at another location in Barrington.
I was glad that I went there again this year because the talk and some products were new. It’s nice to see the business growing and expanding.
I bought my usual 250 ml leaf-shaped glass bottle of syrup at $9.00 ~ $1.00 less than last time.
I maintain my 5.0 rating on Spring Harvest Maple Farm and can recommend a visit.
