We are foodies.
We talk about food from dusk till dawn—what to eat, where to eat, where to find the right ingredients, and what is in season.
Northern Thailand is generally a farming region, and specifically, Chiang Mai is considered the food capital. So, when we decided to visit Chiang Mai on our recent trip, I started researching cooking schools.
There are many! I counted 30+ schools. I started reading reviews and watching video clips. Most of them seemed like a fun day with a group of other tourists where the main focus was eating Thai food rather than learning how to make it.
And then May stood out.
I loved that May herself was the one cooking—and only her! I could also see from her video channel that she was the one teaching and cooking, not a “stand-in.”
Her class also starts at the local market, which I loved because we had questions about chili varieties, rice differences, and, in general, we wanted to pick her brain about Thai produce.

The Experience
The day arrived, and we were picked up from our Airbnb and driven 15 minutes outside Chiang Mai, where we met May at the market.
And May is fantastic—lively, communicative, and eager to share her knowledge of Thai food from the very start.
We visited her favorite vendors and learned about different chili varieties, rice qualities, types of prawns, and much more. May bought the last few ingredients we needed, and we picked up (too) many items to take home with us.
After a 30-minute drive, we arrived at her house and outdoor cooking studio, which had the most beautiful view over the rice fields. But no time to just admire the scenery—on with the aprons and time to chop!
Our chosen menu for the day:
• Spring Rolls
• Fried Rice with Chicken and Dressing
• Hot & Sour Prawn Soup (Tom Yum Goong)
• Chicken in Coconut Milk Soup (Tom Kha Gai)
• Green Curry with Chicken
• Panang Curry with Pork
• Dips we had tasted with grilled fish
We both love Thai food and had experimented with cooking all of the above dishes before, but we wanted a deeper understanding of the ingredients and cooking techniques. And wow, did we get that!
Seven hours later, we had chopped, cooked, and eaten all of the above while learning so much. A day we will never forget. From now on, May will be our reference for all our Thai cooking.
Final Tip: DO NOT eat anything before going to May’s class, as you will be eating so much delicious food.
