点评:I signed up for the Maman Blanc course, partly because I liked the look of it and partly as it took place on my birthday.
It had a mix of watch-&-learn and learn-by-doing that I liked v much.
We watched the chef make clafoutis and steak maman blanc, with lots of info about how to make it work.
Then we started practical work. We made a soup, a salad, and a salmon dish (see pics...yes, I know my presentation skills need work!). Basically, our chef Michael made the dish while we watched, we tasted to see what we were aiming for, and then we were given the ingredients and went off to make it ourselves. I *loved* this part.
Some reviews here have complained that there were no sophisticated techniques taught...I get that, but this course was about how to make simplicity sing. I've tried all three dishes at home, and it's been a revelation. But I do realise that more confident/expert cooks may want more.
Would I go back? Yes, I definitely would. I've got my eye on a fish course and a sauce course. Based on reviews here, I'd probably check to see how much learn-by-doing is included. I should add that Michael was wonderful - full of advice, hints and tips about how to take your cooking to the next level, and so clear about how to make the prescribed dishes work well. Thanks also to Emma and Jaya (sp??) who were v friendly around the kitchen.
