点评:Had an absolutely fantastic experience on this deer field butchery course. I had booked this as a birthday present well in advance. Dan kept in touch and was very informative about the day, preparing us for the wonderful wildlife environment where the day took place. A undisclosed small clearing in the woods of Northumberland. Camp fire burning on arrival, kettle on. Prep area for butchery, and our lovely little deer already hanging and covered. Started off with housekeeping, health and safety, the use of knives and general awareness and the structure of the day. This is not a course for the squeamish, it’s a very hands on day, with great team building skills, we were very lucky to have such a skilled group of paramedics, doctors, and a vet. This didn’t put anyone off, and everyone having the opportunity under Dans great supervision to have a chance at butchery with respect. What I loved about this is it makes you respect nature. Not one piece was wasted, even the hide, was scraped clean and salted for further use. The excitement of taking the butchered meat home and planning what to cook with the cuts was a nice end to the day. Also loved the wooden spoon carving which I think only one person finished as we were too busy chatting and enjoying the day. Dan brings the group together to create a wonderful synergy. From chopping wood, keeping the fire going, tidying and washing up, and all getting stuck in to help make the day a enjoyable one.
