点评:This was one of my favorite bourbon and craft distilling experiences. H&C operates in a large, old three story building in downtown Paris, fermenting on floor three then using gravity to get it to the still on floor two. The double stills where they produce their gin, the original bourbon stills, are so small it's hard to explain how small "small batch" really means here. The bigger single still still only cranks out about a barrel or so per day according to our guide -- so everything you buy here is likely something you'll never see on the store shelves very far away.
I liked that they honored traditions of distilling, including pre-Prohibition styles, but also had modern takes on things. The visit was friendly, unpretentious, educational, and sampling the products was amazing. They were generous too ... the tour comes with four tastes, but they are proud of their products and would sneak some sips of other things that caught our eyes. Extra tastes that led us to extra purchases!
This place is a hidden gem and a top-notch bourbon and distilling experience. You won't regret a visit!
