点评:How could Hocking Hills Winery’s “Wood Fired” Pizza reach our table only five minutes after our order? Why was it only warm, not hot? Why did the crust droop when picked up instead of being crispy? Shouldn’t a pizza just baked on a blistering hot stone oven floor and served so quickly, straight from the oven be hot and crispy, not lukewarm and soggy? And lastly, why were there only a few small bits of toppings on the most expensive pizza on the menu the “EVERYTHING” pizza?
The answer to the first four questions is that this "wood-fired pizza" was made with a crust pre-baked somewhere else which was topped and warmed up, not baked in a hot wood fired oven, and not even in a hot pizza oven, but in a conventional oven like I have in my house. I’ve learned that Restaurant supply companies sell these crusts FROZEN to be kept on hand and topped when needed. Wood fired pizza to me means the restaurant has a blistering hot stone floored oven heated to cook freshly shaped pizza pies made only when an order arrives with that fresh dough stretched, topped and baked in that oven. That's sure not what Hocking Hills Winery is selling. Starting from a frozen crust explains the why we were served a flabby, warm pizza.
Now, as to the scarcity of toppings, the menu lists this as All The Way pizza as:
“Three cheese blend, pepperoni, prosciutto, peppers, onions, mushrooms, and olives with marinara sauce. $25”
Some on line reviews of this exact offering by reviewers show a pizza, browned crust and well covered with large slices of peperoni, chunks of peppers, olives, onion, etc. but ours looked like a cheese pizza with only a few very small pieces of toppings. I wish I had taken photos of this disappointing offering. We went on a Monday, and perhaps the kitchen had exhausted their supply of toppings over the weekend.
Our waitress was informative about wine offerings, but I chose to drive to Hocking Hills Winery because I wanted pizza made to order, and was certainly disappointed.
