Our tour with Lorenzo was informative. We learned a lot about the production of Grappa.
For instance: There are two types of Grappa producers - Small Batch, and Continuous Flow. This is a Small Batch operation. Just like whisky, small batch producers produce the best product.
1,000 kilos of grapes will produce 100 kilos of pumice, which is the seeds and skins left over after wine fermentation. In a small batch distillery, those 100 kilos, about 220 pounds, will render only twenty five to thirty liters of high proof Grappa.
The owner of the company started with his equipment in his parent’s garage in 1977. Today he has a total of three systems and produces over 300k bottles of high quality grappa per year.
Lorenzo explained how the distillation towers work, and how the grappa is separated into different quality levels.
They have a very well organized storage facility. They keep records of every production run, down to the barrel – Barrique - it was stored in. Even after it is bottled, they can trace back its history.
We saw the bonded storage facility but could not enter because it is sealed by the government.
And then the fun part, the tasting. They have about sixty bottles available. We sampled only ten.
The best part is you can purchase grappa there that is not imported to the US. Sales are cash only, no credit cards.
